If you can do wheat – try Duncan Hines Moist Deluxe Butter Recipe Cake mix. It has wheat and you add egg (egg replacer) and acceptable margarine. This holds together so well and is good for cupcakes when other mixes fall apart. Very moist! Duncan Hines also makes a Dark Chocolate Fudge mix too.
If you can’t do wheat, Duncan Hines now makes a gluten-free cake mix.
For icing, Pillsbury or Duncan Hines makes a variety with just soy. Whipped Fluffy White, Chocolate, Vanilla, etc. Just make sure you double check the label.
Use sprinkles or Betty Crocker Icing spray (found in King Soopers) or make flags to put in cupcakes.

Egg replacement ideas:
-Ener-G Egg Replacer
-1/4 cup applesauce=1 egg
-1tsp baking powder, 1 T liquid, 1 T vinegar
-1 tsp yeast dissolved in ¼ cup warm water
-1 ½ T water, 1 ½ T oil, 1 tsp baking powder
-1 packet plain gelatin, 2 T warm water (Do not mix until ready to use)
Milk replacement ideas:
-Equal amounts of soy or rice milk
- I have successfully used water!
Butter replacement:
- I have used baby pear, apple, or banana food jars and they work like a charm
-Olive oil
